Grilled Gazaucho Ingredients: shittake mushrooms (stems removed) zucchinni (sliced) yellow squash (sliced) corn on cob (husked) yellow and red pepper (cut on halves or quarters) red onion (sliced thickly) plum tomatoes (cut in half) Grill prep: if possible, put one burner on high, one on medium. Directions: drizzle all veggies with olive oil sprinkle with sea salt, cracked black pepper put on grill: put corn and squash on high side, put onions and peppers on medium side, and put tomatoes and mushrooms in between, out of direct heat. monitor, turn regularly when cooked, put on baking sheet to cool to room temp (handling temp) dice them up to 1/2 to 1/4 inch put veggies in bowl with tomato juice, chicken stock, juice of half a lemon, chopped parsely, fresh thyme (NOT DRIED), more salt & cracked black pepper, and a shot or 4 of hot sauce. garnish with fresh basil serve at room temp, chilled, or warm serve with sangria/zinfandel
