Lentil-Sausage Casserole

Having a well-stocked pantry and freezer can make the difference between having a warm, hearty, nutritious meal and grazing on junk food because there's nothing else to eat. Here, frozen spinach, turkey sausage and canned lentil soup turn into a simple, satisfying dinner.

Ingredients

Qty. Measurement Description
2 turkey sausage, links, Italian-style
1 teaspoon olive oil
1 onion, chopped
19 ounce lentil soup, canned
2 cup spinach, quick-frozen
1 teaspoon dried oregano leaves
1/2 cup converted white rice, uncooked
1/4 teaspoon freshly ground black pepper, or to taste
1/2 cup extra-sharp Cheddar cheese, grated

Preparation Cook: 45 Min

  1. Preheat oven to 400 degrees F (205 degrees C). Remove casings from sausage and crumble with a fork.
  2. In a skillet, heat oil over medium heat. Add sausage and onions; cook, stirring, until onions soften, about 5 minutes. Add soup, spinach and oregano; heat through. Add rice. Season with pepper.
  3. Transfer to a lightly oiled baking dish; cover with foil. Bake casserole for 35 minutes, or until rice is tender. Top with cheese. Bake uncovered for a few minutes to melt cheese.
