Even if you've sworn off bacon, you can still enjoy its great, smoky, salty flavor. Look for vegetarian or tempeh bacon in your supermarket or health-food store.

Ingredients

4 - slices vegetarian or tempeh bacon
1 - large vine-ripened tomato cooking spray
4 - egg whites
- - Sea salt and freshly ground black pepper to taste

Preparation - Estimated cooking time: Under 30 minutes -   
1 Prepare bacon according to package directions.
2 Core tomato. Slice in half vertically. Place flat-side down and cut into thin slices. Fan slices on 2 plates.
3 Spray 2 nonstick egg pans or small skillets lightly with cooking spray and set over low heat. Add 2 egg whites to each pan. Cover and cook until eggs are firm, 2 to 4 minutes. Transfer to plates, season with salt and pepper. Serve with bacon.
