Brief Description: I would bring this in periodically for my workmates. When I found out I was going to be a Grandmother and told them they thought the name was appropriate.
Recipe Name: Gramma Cobb's Salsa
Ingredients:
  • 6 fresh jalepeno peppers
  • 1 medium sized valdia onion (or any sweet onion in season)
  • 16 oz can diced tomatoes
  • 1 fresh lime
  • 1/2 C fresh cilantro
   
Directions: Boil peppers until they are soft and not as bright a green. This usually takes about 10 - 15 min. Rinse in cold water and let them set in the water. I use a small processor to combine all the ingrediants, otherwise the chunky pieces will have to be diced. Cut onion into chunky pieces. The peppers should be cool to touch, split them in half and de-seed. Put the seed aside, this is what gives the salsa heat and since you can't always predict the heat of the jalepenos you might need to add some of the seeds when you finish. Cut the peppers into chunky pieces also. Pick the leafy part of the cilantro from stem. Try not to use the stems, they don't cut up very well in the processor. I alternate ingrediants until everything is mixed in; onions, tomatoes, peppers, cilantro. About halfway through the processing squeeze 1/2 the juice of a lime. When finished salt to taste add remaining lime juice. Serve with tortilla chips. Ole.
