Directions

  1. Heat oil in large stockpot on MED-HIGH; add garlic, green onions, and jalapeno. Cook, stirring, 3 min.
     
  2. Add broth and zucchini basil puree; stir to combine. Bring to simmer 1 min. Add cilantro; simmer 2 min. Remove from heat; let cool slightly. 
     
  3. Transfer soup to blender; puree until smooth. Season with salt and pepper. Garnish with crushed croutons.
