Chicken and Noodles in a Skillet Miavita

Here's a one-pot meal perfect for a busy weeknight; serve it straight from the skillet. Serve with crusty whole-grain bread spread with soft goat cheese; sliced cucumber and tomato salad.

Ingredients

2 cups wide egg noodles or spinach noodles
1 or 2 - carrots, peeled and very thinly sliced
1/2 cup frozen baby peas, thawed
1 cup cooked and diced chicken meat
1 tbsp. chopped mixed fresh herbs – parsley, thyme, chives and/or tarragon
2 1/2 cups low-sodium chicken broth

Preparation - Estimated cooking time: under 30 minutes -    
1 In a large skillet, bring chicken broth to a boil over medium-high heat. Add noodles and carrots. Cook until almost done, about 4 minutes.
2 Stir in peas and chicken; cook to heat through.
3 Season with salt and a generous grinding of black pepper. Stir in herbs. Ladle into shallow bowls and serve.
