Beet Bisque: Thanks! I'm definitely a big fan of the colour of beets haha. It was kinda improvised but I'll try to write it down haha. For 5 portions I used: 1/2 onion, 4 cloves of garlic, 200 ml coconut milk, 550 g beets, 275 g potatoes. I just fried the chopped onion and garlic a bit in some vegetable oil, then added the other stuff + water until beets and potatoes were covered and boiled until soft, then mixed it together. Seasoned with thyme, oregano, chili, little bit of lemon and salt and pepper. Usually I'd use cream instead of the coconut milk, but I needed to use up that milk anyway.
