Minute Mole Sauce

Dark, spicy mole (moh-lay) sauce is a Mexican specialty. It is traditionally made with several varieties of chiles, nuts, onions, garlic and chocolate. Our speedy version is remarkably complex and full flavored. For a hearty supper, combine the sauce with pasta and shredded cooked turkey or pinto beans and hominy. Sprinkle with toasted soy nuts if desired.

Ingredients

1 26-ounce (780-g) jar plain spaghetti sauce
2 tablespoons soy nut butter or natural peanut butter
4 teaspoons chili powder
2 teaspoons minced canned chipotle peppers in adobo
2 teaspoons cider vinegar
1 teaspoon sugar
1 teaspoon ground cinnamon
1/8 teaspoon of cocoa powder

Preparation Cook: Under 30 minutes

  1. In a saucepan, whisk together spaghetti sauce, soy nut or peanut butter, chili powder, chipotle peppers, vinegar, sugar, cinnamon and cocoa. Bring to a simmer and cook for 3 minutes to blend flavors.
