Pile up several slices of a nice firm-textured white or wheat bread--- not airpufd Wonder Bread---and cut into wee cubes with or without crusts, as you choose. (Auntie Darla freqently uses a lovely sliced sourdough for this) Spread cubes on a baking sheet and MIST (with one of those spray bottles) with extra virgin olive oil. Sprinkle with the following combination of dried herbs, in whatever strength you like: thyme/parsley/sage/and-or "poultry seasoning." Add a whisper of salt, a crescendo of ground pepper. Pop into a 350 oven until dried out and crunchy--- maybe 15 mins. Remove from oven, let cool, then put into a big bowl and add Roux de Karlo and whatever other ingredients and additional seasonings you prefer, and stuff bird as usual. This allows you to make as much or as little stuffing as you'd like, without having to plan too far ahead. Also, you can make a big batch of this and--- as long as the cubelets are well dried--- you can pop a ziploc bag of it into the freezer for later use.
