ZORBA'S HEART-HEALTHY
RECIPE OF THE WEEK

Lobster Alfredo(#48-01)
(Makes 6 Servings)
From Ponte Vedra Beach, Florida Listener Peggy Piper

1/2 Cup Shallots, sliced
4 Cloves Garlic, minced
8 oz No-fat cream cheese
1 pint No-fat half & half
1/2 Cup Parmesan cheese
1 tsp Red pepper flakes
1/4 Cup White wine
1 lb Lobster, cooked & cut into bite-size pieces*
8 oz Linguine, cooked
Canola cooking spray
                                                                                                                                                              
Coat large frying pan with cooking spray; add shallots and garlic, cover and simmer for 5 minutes.
Add wine and continue to simmer; add softened cream cheese, half and half, red pepper flakes and
parmesan cheese; mix thoroughly. Add lobster, and cook 4-6 minutes. Serve hot over linguine.
*Boiling Lobster Tails
Drop lobster tail, (fresh or thawed), into large kettle of boiling water with 1 tsp. salt for
each quart of water. When water reboils, lower heat and begin timing.
