Tacos Nuevos Miavita

Going easy on the cheese and using soy meat or lean turkey instead of ground beef effectively cuts the fat in a taco dinner. Serve with lime wedges; cilantro sprigs; your favorite salsa; and fat-free refried beans from a can.

Ingredients

- - Romaine lettuce, shredded
1 - small red onion, chopped
12 oz. soy meat or ground turkey
1 - can diced tomatoes (10 oz.) with green chilies, such as Ro-Tel
8 - no-added-fat corn or flour tortillas
1/2 cup grated jalapeño cheddar or jalapeño jack cheese (2 oz.)

Preparation - Estimated cooking time: under 30 minutes -   
1 Spray a sauté pan with cooking spray and warm over medium heat. Cook onions until they begin to soften. Add soy meat or ground turkey and cook until browned. Add tomatoes with chilies and cook, stirring, until much of the liquid evaporates, about 5 minutes.
2 Warm tortillas over a gas flame or electric burner.
3 Assemble tacos, garnishing with cheese and lettuce.
