Soy "Beef" and Macaroni Casserole Miavita

Many old-favorite comfort foods are too high in saturated fat to fit into today's healthy eating styles. Here, the switch from beef to a soy substitute brings together the best of both worlds.

Ingredients

2 cloves garlic, minced
1 - red bell pepper, seeded and cut into small dice
1 - green bell pepper, seeded and cut into small dice
1 - package (14 oz.) ground soy "meat," such as Smart Ground
2 cans (14 oz. each) recipe-ready tomatoes with Italian herbs
2 tablespoon chopped fresh parsley
- - Sea salt and freshly ground black pepper
1 - lb. elbow macaroni or other small sturdy pasta shape
- - Canola oil cooking spray
1 - large onion, chopped

Preparation - Estimated cooking time: 30-60 minutes -    
1 Bring a pot of water to a boil. Add macaroni and cook until al dente. Drain and rinse under running water. Set aside.
2 Lightly coat a large nonstick skillet with cooking spray and heat over medium heat. Cook onions until soft, stirring often, about 5 minutes. Add garlic and cook for 1 minute.
3 Stir in red and green peppers and cook until soft, about 5 minutes. Add soy meat, breaking it apart with a wooden spoon. Add tomatoes and parsley. Cook over medium-low heat for 4 - 5 minutes. Season with salt and pepper.
4 Add cooked macaroni and stir to combine. Warm briefly and transfer to a serving dish.
