Curried Tomato Sauce with Roasted Carrots Miavita

This easy sauce is excellent tossed with pasta and shrimp, chicken or chickpeas.

Ingredients

- - Olive oil cooking spray
1 1/2 cups (8 oz/240 g) finely diced carrots
1 26-ounce (780-g) jar plain spaghetti sauce
1/4 cup sliced green onions
1 teaspoon curry powder

Preparation - Estimated cooking time: Under 30 minutes -    
1 Preheat the oven to 425 degrees F (210 degrees C). Spray a baking sheet with sides with cooking spray. Spread carrots on pan and lightly coat with cooking spray.
2 Roast carrots until tender, about 10 minutes, stirring midway through the roasting.
3 In a large saucepan, combine spaghetti sauce, green onions, curry powder and the roasted carrots. Heat over medium heat until hot.
