  1. Preheat oven to BROIL. Coat frozen scallopini lightly with flour; dip in egg to coat. Transfer to shallow bowl of bread crumbs; coat all sides. Set aside.
     
  2. Heat oil in large sauté pan on MED until oil faintly smokes. Add scallopini; cook about 2 min until golden. Turn over; cook, 6-7 min, until temp reaches 165 degrees (check by inserting thermometer halfway into thickest part of scallopini).
     
  3. Transfer scallopini to casserole dish; reserve drippings in pan. Top each with 3 slices tomato and 1 slice mozzarella. Broil, about 4 min, until mozzarella is melted and golden; remove from oven.
     
  4. Add zucchini noodles to pan on MED-HIGH; season with salt and pepper. Cook, stirring, about 2 min. Add sauce and water; cook, stirring, about 2 min until heated through.
     
  5. Arrange zucchini mixture on serving platter; top with scallopini. Garnish with parsley.
