Cocoa Frosting Miavita

A chocolate lover's delight, this recipe makes enough frosting to ice a large layer cake.

Ingredients

2 tablespoons low-fat cocoa powder
1/4 cup hot water
3 - egg whites
1 1/2 cups natural cane sugar
1 teaspoon cream of tartar
2 teaspoons vanilla extract

Preparation - Estimated cooking time: Under 30 minutes -    
1 In a large metal bowl, dissolve cocoa powder in hot water.
2 Add egg whites, sugar and cream of tartar. Set the bowl over a saucepan of simmering water. (Water should not touch the bottom of the bowl.)
3 Using a hand-held electric mixer, beat mixture on low speed for 4 minutes. Increase speed to high and beat an additional 4 minutes.
4 Remove from heat. Beat on high 3 minutes longer. Stir in vanilla and chill 20 minutes before using to frost cake.
