Lemon-honey Syrup Miavita

Use 1 or 2 tablespoons of this tart-sweet syrup to sweeten a hot cup of green tea. It's also delicious in mulled cider.

Ingredients

3 - lemons, scrubbed
1/2 cup (4 fl oz/120 ml) honey
1/3 cup (2 1/2 oz/75 g) natural cane sugar

Preparation - Estimated cooking time: Under 30 minutes -    
1 Thinly slice 1 lemon and place in a small saucepan. Squeeze the remaining 2 lemons and add the juice to the pan.
2 Add honey and sugar to the pan and warm over medium-low heat. Stir gently to dissolve sugar. When the syrup is about to simmer, remove the pan from the heat, cover and let steep for 15 minutes.
3 Strain syrup into a small pitcher and use to flavor teas.
