Pizza with Spinach and Sun-Dried Tomatoes

Serves 4

1 10 oz packaged pizza crust (like Boboli, or make your own, but cook it first)
1 10 oz (about 0.4 pounds) package of salad spinach, stems removed
1 (or 10) large cloves of garlic, chopped
2 Tablesp olive oil
1/4 cup rehydrated sun-dried tomotoes, sliced
4 oz crumbled feta chees
ground black pepper to taste


(preheat oven to 450 degrees)

1. Heat oil in large skillet; add garlic and cook on low for 1 minute (do not brown).

2. Add spinach and season with pepper; cover and cook, stirring once, just until spinach is wilted.

3. Top pizza crust with spinach and pan juices. Sprinkle on sun-dried tomatoes and cheese.

4. Bake in oven for 8-10 minutes.
