Jaime sent you a message. -------------------- Subject: Easy Cheesey Chicken Enchiladas 1 can of cream of chix soup 1/2 cup of sour cream 1 cup Picante sauce 2tsp chili powder 2 cups cooked cut or shreaded chicken 1/2 cup shredded Monteray Jack cheese 6 tortillas warmed (6") 1 small tomato chopped (about 1/2 cup) 1 green onion sliced (about 2tbsps) 1) Stir soup, sour cream, picante sauce and chili powder in medium bowl. 2) Stir 1 cup of soup mixture, chicken and Monteray Jack cheese in a large bowl 3) Divide chicken mixture among tortillas and place seam side up in 11"x8" shallow baking dish. Pour remaining soup mixture over filled tortillas. Cover baking dish 4) Bake @350 for 40 mins. 5) garnish with chopped tomatos and onions Jeremy, A couple of substitutions: I have used Cheddar Cheese soup mix in place of Cream of Chix. I've also used different shredded cheeses and they all turned out pretty good, except for whne I tried Italian cheeses(mozz etc) . I've also used 10" tortillas b/c it seems there is a lot of extra filling! I still get about 6 enchiladas..Also used guacamole for a topping rather than tomato and onion! ENJOY!
